Apple Cobbler
(From A Taste of Carthage, Tennessee Cookbook)

Ingredients

3 Tablespoons brown sugar

1/4 teaspoon cinnamon

1/4 teaspoon nutmeg

1 teaspoon lemon juice

2 medium cooking apples, peeled and sliced

1/3 cup all-purpose flour

2 Tablespoons sugar

1 teaspoon baking soda

2 Tablespoons milk

1 Tablespoon vegetable oil

Directions

Preheat oven to 375 degrees. Combine sugar, cinnamon, nutmeg, and lemon juice. Add apples and toss well to coat. Spoon apple mixture into two 10-ounce custard cups and set aside.

Combine flour, sugar, and baking powder in a small bowl. Combine milk and oil. Stir into flour mixture until moistened. Drop dough by the spoonful onto apple mixture. Bake for 15 to 20 minutes. Serve warm.
