(There are many variations of this style of chili. Use this basic
recipe to develop your own signature version.)
Ingredients
1 Tablespoon Oil
2 pounds Beef chuck steak, cubed
1 medium Onion, diced
1 teaspoon Garlic, minced
4 Tablespoons Chili powder
1 1/2 teaspoon Cumin
1 cup Beef broth
1/2 cup Beer
1 teaspoon Cider vinegar
1 teaspoon Oregano
Salt and pepper to taste
Hot sauce (optional)
Directions
Heat the oil in a heavy pot. Add the beef and brown. Add the onion and cook until just soft. Add the garlic and cook for 1 minute longer. Add the remaining ingredients. Slowly bring to a boil. Reduce the heat and simmer until the beef is tender (about 1 1/2 hours).
Serve warm with jalapeno peppers, cheese and crackers.
