Cajun Cornbread
(From the kitchen of C. Jackson, Port Arthur, Texas)
Ingredients
1 pound crawfish, chopped
2 cups cheddar cheese, shredded
1 stick margarine, softened
1 tablespoon salt
1 15-ounce. can creamed corn
1 small onion, chopped
1 small bell pepper, chopped
2 jalapeño peppers, chopped
3 eggs
1 teaspoon baking soda
1 tablespoon Creole seasoning
1 bunch green onions, chopped
1 8 1/2-ounce package Jiffy cornbread mix
Directions
Mix all ingredients well in a large bowl.
Pour into a greased pan.
Bake at 350 degrees for 45 minutes.
Serves 8
