CANDIED SWEET POTATOES
INGREDIENTS
1
lb. Sweet Potatoes
3/4
cup Brown Sugar
1/8
tsp. cinnamon
1/4
cup Butter or Margarine
DIRECTIONS
Peel
and slice the sweet potatoes. (*) Place in casserole dish.
Cover
sliced potatoes with butter.
Combine
cinnamon with brown sugar and sprinkle on top of butter and potatoes.
Cover
dish, and bake in 350F (170 C) oven for approximately 40 mins or
until sweet potatoes are soft.
NOTE: I prefer to cut the cooking time of this dish by pre-cooking the sweet potatoes (I microwave on high for 10 mins) before slicing and placing them in casserole dish.
(I remember that my grandfather poured heavy sweet cream over them on his plate....Yep, really! And he lived to be 92!)
