Chocolate Layer Fudge Cake
Ingredients
2 cups sifted cake flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2/3 cup water
3 ounces unsweetened chocolate
1 1/2 cups sugar
1 teaspoon vanilla
2/3 cup butter
3 eggs
1/3 cup buttermilk
Directions
Sift flour, baking powder, baking soda and salt onto waxed paper. Cook chocolate, water, and 1/4 cup sugar over low heat until thick and smooth. Transfer to bowl, chill over ice water, stirring often. Add vanilla. Beat butter and sugar until fluffy. Beat in eggs, 1 at a time. Add chilled chocolate, blend. Add sifted ingredients alternately with buttermilk. Beat well after each addition until smooth. Pour into greased and floured 8-inch round cake pans. Bake at 350ºF for 35 minutes or until center springs back. Remove from pans, cool on wire rack. Split each layer in half.
Frost with chocolate fudge icing: Combine 6 squares semisweet chocolate and 3 tablespoons butter in small saucepan over low heat just until melted. Transfer to bowl; beat in 7 tablespoons milk and 1 teaspoon vanilla until blended. Beat in 3 cups sifted confectioners' sugar until smooth.
