Creamed Chicken

Ingredients

1 (8-ounce) package sliced mushrooms

1/3 cup chopped green pepper

1 medium onion, chopped

1/4 cup butter or margarine, melted

1/3 cup all-purpose flour

1 (14-1/2-ounce) can chcken broth

1 cup half-and-half

2-1/2 cups chopped cooked chicken

1/2 teaspoon poultry seasoning

Dash of pepper

3 tablespoons dry sherry

1 (2-ounce) jar iced pimiento, drained

Buttermilk Cornbread (click on recipe link below)

Directions

Saute first 3 ingredients in butter until tender. Add flour, stirring until smooth; cook 1 minute, stirring constantly

Gradually add broth and half-and-half; cook over medium heat, stirring constantly, until thickened.

Stir in chicken and next 5 ingredients; cook 5 minutes.
