CURRIED CHICKEN AND RICE

        INGREDIENTS
        4 slices bacon
        1 Tbsp. bacon drippings
        1/4 Cup sliced celery
        1/4 Cup chopped onion
        1 clove garlic, minced
        2 Tbsp. flour
        1 Cup milk
        1 Cup water
        1/4 Cup applesauce
        1/2 Cup finely chopped apples
        4 tsp. curry powder
        2 chicken bouillon cubes
        2 Cups cubed, cooked white meat of chicken
        Hot cooked rice

        DIRECTIONS
        Cook bacon until crisp; drain, reserving 1 Tbsp. drippings
        Crumble bacon and set aside
        Cook celery, onion and garlic in reserved bacon drippings.
        Blend in flour.
        Stir in milk, water, applesauce, apples, curry powder, and bouillon cubes.
        Cook and stir until thickened and bubbly.
        Stir in chicken and bacon.
        Heat thoroughly and serve over hot cooked rice.
         
        Accompany with assorted condiments. My favorites are raisins and chutney

        Chutney
        Diced green bell peppers
        Toasted Coconut
        Chopped peanuts
