"Grilled Maple Spareribs"
(June, 2000 Recipe of the Month)
INGREDIENTS
3
to 4 pounds pork spareribs
*Enough
Liquid Smoke too brush on both sides of rib rack
1
cup 100% PURE maple syrup
1/3
cup soy sauce
3
Tbsp. sweet cooking rice wine
1
Tbsp. garlic powder
2
tsp. salt
1/2
tsp. sugar
Enough
water to cover ribs in Dutch oven
Addition to Recipe: (Before brushing ribs with maple syrup, I brush with liquid smoke)
DIRECTIONS
Put ribs in large Dutch oven, cover with water, and bring to boil.
Reduce heat and simmer 30 minutes. Drain well.
Prepare fire on grill by piling charcoal or lava rocks on 1 side of grill,
leaving the other side empty.
Coat the par-boiled rack of ribs with cooking spray and place on empty
side of grill. Cover with grill lid.
Grill for 1 hour and 30 minutes, basting occasionally with sauce.
Maple Syrup Directions
Stir together maple syrup and next five ingredients.
Brush both sides of ribs heavily with Liquid Smoke.
Baste ribs with syrup before putting on grill.
Continue basting with syrup mixture until ribs are
done (grilled to your liking). Pour remainder over ribs before serving.
