Grilled Chicken With Portobello Mushroom Sauce

Ingredients

2 tablespoons butter

3/4 cup Portobello mushrooms, finely chopped

1/4 cup onions, diced

1/4 cup bell peppers, diced

1/4 teaspoon garlic powder

2 tablespoons flour

1-1/2 to 1-2/3 cups milk (start with 1-1/2 and increase only if you wish a thinner consistency)

2 chicken boullion cubes

1/4 teaspoon salt (or to taste)

1/4 teaspoon pepper

Garlic butter (made from melting butter and adding a bit of garlic powder) for brushing chicken before grilling

4 chicken breasts, boneless, skinless

 

Directions for Mushroom Sauce

Melt the butter in a saucepan.

Add the mushrooms and onion and saute until just soft.

Mix the garlic powder into the flour, and add the flour mixture to the sauteed mushrooms and onions.

Cook for 3 minutes.

Add the milk and boullion cubes and simmer for 20 minutes, stirring frequently.

Check seasonings and adjust if necessary.

Brush the chicken on both sides with melted garlic butter and grill.

Top with the warm sauce.
