Grilled Portabella Mushrooms in Wine Marinade
(From the Detroit Free Press Food Section)

Ingredients for Marinade

1 cup hearty red wine, such as Cabernet Sauvignon

1/3 cup balsamic vinegar

1 tablespoon chopped fresh rosemary or 1 1/2 teaspoons dried

1 tablespoon chopped fresh sage or 1 1/2 teaspoons dried

1 tablespoon chopped fresh basil or 1 1/2 teaspoons dried

2 garlic cloves, peeled, crushed

1/2 teaspoon salt

1/2 teaspoon crushed hot red pepper flakes

1/2 cup extra virgin olive oil

Directions for Marinade

In a medium bowl whisk together all ingredients except the oil.

Gradually whisk in the oil in a steady stream.

Use immediately.

Makes about 2 cups

 

Grilled Marinated Portabella Mushrooms

Ingredients

6 large portabella mushroom caps, brushed clean, stems removed

1 cup Napa Red Wine Marinade (recipe above)

Salt to taste

Directions

Preheat or prepare the grill for high heat. Place the mushrooms in a large glass dish. Pour the marinade over the mushrooms and let stand, turning occasionally, 10 to 15 minutes.

Lightly oil the grill grate.

Place the mushrooms on the grill and cover.

Cook, turning once, until tender, 5-8 minutes.

Season with salt and serve hot.

Makes 6 servings
