HOLIDAY SWEET POTATO CASSEROLE
INSTRUCTIONS

cup margarine
6
sweet potatoes, peeled, cooked, and sliced
1
teaspoon baking powder
1
teaspoon vanilla
1
teaspoon ground cinnamon
2
eggs
3/4
cup sugar
3/4
cup buttermilk
3/4
cup chopped pecans (optional)
Marshmallows
for topping
DIRECTIONS
Add
margarine to hot potatoes.
Combine
with next 6 ingredients in blender or with mixer.
Stir
in pecans, if desired.
Place
mixture in a greased 2-quart casserole dish and bake at 350 degrees
for 30 minutes.
Top
with marshmallows during last 10 minutes of baking.
