Holiday Ham

Ingredients
1 (8- to 10-pound) fully cooked, bone-in ham
48 whole cloves
1 (16-ounce) package dark brown sugar
1 cup spicy brown mustard
1 cup apple cider
1/2 cup bourbon
1 cup hot strong brewed coffee
(optional)
Garnishes: fresh sage leaves, fresh rosemary sprigs, kumquats
Directions
REMOVE skin from ham, and trim fat to 1/4-inch thickness. Make shallow cuts in fat in a diamond pattern. Push cloves into ham in a decorative pattern; place ham in a greased 13- x 9-inch pan.
COMBINE brown sugar and next 3 ingredients, stirring until smooth. Pour mixture evenly over ham.
BAKE on lower oven rack at 350° for 2 hours and 30 minutes or until a meat thermometer inserted into thickest portion registers 140°, basting with pan juices every 15 to 20 minutes. Remove ham; garnish, if desired. Reserve drippings in pan, if desired, for sauce. Stir coffee into drippings, if desired, stirring to loosen browned particles. Transfer mixture to a small saucepan, and cook 5 to 7 minutes or until gravy is thoroughly heated. Garnish ham, if desired. Serve ham with gravy. Yield: 12 servings.
