Italian Sausage Skillet
(This is served at Heartstone Inn in Eureka Springs, Arkansas)
Ingredients
2 pounds Italian sausage, cut in 10-inch pieces
1 tablespoon olive oil
4-ounces mushrooms, sliced
1 large red onion, cut in half and then cut into 1/8-inch slices
1 green bell pepper, chopped in small pieces
Directions
Cook the sausage in the oil in a 12-inch skillet over medium heat until brown and no longer pink inside, 20 to 25 minutes.
Add the mushrooms and onion; reduce the heat.
Cover and simmer, stirring occasionally, until the vegetables are tender, about 10 minutes. Add the green pepper.
Cover and simmer until the green pepper is tender, about 5 to 7 minutes.
Serves 8 to 10
