Kielbasa, Cabbage, and Potatoes
(This is a great cool weather supper)
Ingredients
1 tablespoon vegetable oil
1 pound Kielbasa, cut 1-inch thick
1 large onion, chopped
3 large carrots, peeled and chopped
1 clove garlic, minced
6 cups cabbage, coarsely chopped
2 pounds red potatoes, sliced
1 cup chicken broth
1/2 teaspoon celery seed
salt and pepper to taste
Directions
In a large nonstick skillet, heat oil.
Cook Kielbasa until brown.
Add onions and carrots and cook until onions are translucent. Add garlic and cook 1 minute more.
Drain and discard fat.
Add cabbage, sliced potatoes, broth and celery seed.
Bring to a boil; reduce heat and cover pan.
Simmer for 35 to 40 minutes or until potatoes and cabbage are tender.
Check occasionally and add additional broth if needed.
Season with salt and pepper to taste.
