Ingredients
1 tablespoon olive oil
1/2 pound pork tenderloin, cut into thin bite-size strips
1/2 cup coconut milk (from a can)
1/4 cup crushed pineapple
2 teaspoons lime juice
1 package (1 pound) frozen teriyaki stir-fry meal starter (such as Green Giant Create a Meal)
1/4 cup chopped macadamia nuts
1/4 cup shredded coconut
4 cups hot cooked rice
Directions
In a large skillet or wok, heat the oil over medium-high heat. Add the pork strips; cook and stir for 5-6 minutes or until browned.
Add the coconut milk, pineapple and lime juice; mix well. Reduce the heat to low; simmer 3 minutes, stirring occasionally.
Add the frozen sauce and vegetables from the meal starter; mix well. Cook 7 to 10 minutes or until the cegetables are crispo-tender, stirring frequently. Stir in the nuts and coconut.
