Mama's Ham Loaf

Ingredients

1/2 cup firmly packed brown sugar

1 can sliced pineapple (save juice)

6 maraschino cherries

1 pound ham, ground

1/2 pound fresh pork, ground

1 cup fine soft bread crumbs (I use commercial breadcrumbs)

1 egg, unbeaten

1 cup milk

1/4 cup minced onion

1/4 cup minced celery

1/2 teaspoon salt

1/4 teaspoon pepper

Juice from pineapple, meat liquer (juice), and water to make 1 cup

1/8 teaspoon bottled brown seasoning sauce

1 cup water

3 tablespoons flour

Directions

Spread brown sugar in bottom of greased 9-1/2 x 5-1/4 x 2-3/4 (loaf size) pan.

Remove and drain 2 slices of pineapple (save rest of pineapple and all the juice for making gravy). Cut each of the two pineapple slices in three pieces. Arrange pineapple and cherries on brown sugar so some of each, when loaf is inverted, will accompany each serving of meat.

Mix ham, pork, breadcrumbs, egg, milk, onion, celery, salt, and pepper. Pack meat mixture firmly in loaf pan over pineapple and cherries. Bake at 400 degrees for 1 hour. Remove from oven; pour baking juice from pan into a 1-quart saucepan and save for gravy.

Invert ham loaf onto serving platter and keep warm while making gravy.

Gravy

Put pineapple juice, meat juice (au jus), and just enough water (when combined with the other liquid, to make a whole cup), seasoning sauce, and remainder of pineapple, finely diced, into 1-quart saucepan.

In a glass jar with a lid, add the 1 cup of water (listed at bottom of recipe). Next, add the flour. Put the lid on tight and shake vigorously until well blended. Add this to the liquid in the saucepan and bring to a boil over high heat, stirring constantly. Switch to low heat and boil 1 minute.

Yield: 6 servings
