MASHED
SWEET POTATOES WITH PECANS
INGREDIENTS
3
pounds sweet potatoes*
1/4
cup butter or margarine, cut up
1/4
cup firmly packed brown sugar
1
teaspoon grated lemon rind
1
teaspoon grated orange rind
1/2
cup fresh orange juice
1
large egg, lightly beaten
1
cup coarsely chopped pecans
DIRECTIONS
Pierce
potatoes several times with a fork; place on a baking sheet.
Bake
at 350° for 1 hour and 10 minutes or until tender; cool slightly.
Peel
potatoes, and mash with a potato masher. Stir in butter and next 5
ingredients; spoon into a lightly greased 8-inch square baking dish.
Bake,
covered, at 350° for 45 minutes. Uncover, sprinkle with pecans,
and bake 10 more minutes.
*
It will cut your baking time by one-third if you pre-cook potatoes
in the microwave for 15 minutes, turning once, before baking in oven.
