MEAT LOAF
(Serve with Tomato Gravy Recipe)
INGREDIENTS
2 pounds ground chuck
1 (1 1/4-ounce) envelope taco seasoning
1/2 cup Italian-seasoned breadcrumbs
1 small sweet onion, finely diced
2 large eggs, lightly beaten
1/3 cup ketchup
1 (10-oz.) can ROTEL Mexican Festival Tomatoes & Green Chiles
1/2 cup (2 ounces) shredded Monterey Jack cheese
Tomato Gravy (see Recipe under "Gravies, Sauces, etc.")
DIRECTIONS
Stir together first 6 ingredients in a large bowl until blended.
Shape mixture into a 10 x 6-inch loaf and place in a lightly greased
baking dish or pan.
(Cover and chill 8 hours for best flavor)
Top meat loaf evenly with tomatoes and green chilies.
Bake at 425 degrees for 45 to 50 minutes or until meat is no longer pink.
Pour off juices.
Sprinkle meat loaf with cheese and let stand 15 minutes.
Serve with Tomato Gravy.
YIELD: 6 to 8 servings
