Pan-Fried Grits with Salsa
(This recipe combines flavors I enjoy and makes eating grits a very
pleasurable experience)
Ingredients
1 (10-ounce) can chicken broth
1 (8 ounce) jar of Cheese Whiz
1/2 cup water
1/4 cup butter or margarine
1 tablespoon sliced pickled jalapeno peppers, minced
1 cup uncooked quick-cooking grits
2 tablespoons butter
2 cups commercial salsa
Directions
Combine first 5 ingredients in large saucepan; bring to a boil over medium heat.
Gradually stir in grits; cover; reduce heat, and simmer 5 minutes, stirring often.
Pour into a lightly buttered 9-inch pieplate. Cool to room temperature; chill 1 hour.
Unmold grits and cut into 6 wedges.
Melt 2 tablespoons butter in a large skillet.
Add wedges and cook 3 to 4 minutes on each side until lightly browned.
Serve with salsa.
Makes 3-main-dish servings.
