Pasta with Chicken and Peanut Sauce
Ingredients
8 ounces linguine
1/2 teaspoon garlic salt
1/2 teaspoon pepper
2 boneless (about 1 1/4 pounds), skinless chicken breasts, washed, patted dry, diced
1 tablespoon olive oil
1 red bell pepper, washed, cored, chopped
8 ounces broccoli slaw
3 green onions, washed, ends removed, chopped
Sauce:
1/4 cup creamy peanut butter
1/4 cup sugar
3 tablespoons soy sauce
3 tablespoons water
2 tablespoons oil (any variety)
1 teaspoon minced garlic
1/4 cup chicken broth
Directions
Pasta:
Cook according to package directions and drain.
Meanwhile, in a bowl combine the garlic salt and pepper. Add the diced chicken to the spices and toss to coat. Heat the oil in a large skillet over medium heat. Add the seasoned chicken and cook until no longer pink, 4 to 6 minutes. Remove the chicken from the skillet using a slotted spoon and set aside.
Add the red pepper, broccoli slaw and green onions to the skillet and saute until crisp-tender, about 3 minutes.
Sauce:
In a small saucepan whisk together the peanut butter, sugar, soy sauce, water, oil and garlic. Heat over medium-high heat, cooking until mixture is bubbly, stirring occasionally. Set aside.
In a large serving bowl, combine the chicken, vegetable mixture, sauce and chicken broth with the drained, hot pasta and serve immediately.
