PLUM CAKE
INGREDIENTS
2 cups sugar
1 cup oil
1 cup buttermilk (or 1 cup milk plus 1 tsp. lemon juice)
1 jar (junior size) baby food plums and tapioca
3 eggs, unbeaten
2-1/2 cups flour
1 tsp. salt
2 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. cloves
1 cup finely chopped pecans
DIRECTIONS
Grease and flour a bundt or small tube pan.
Combine first 5 ingredients.
Sift dry ingredients and add.
Fold in nuts and pour into pan.
Bake at 325 degrees for 60 minutes or until cake tests done with a toothpick.
Cool in pan 15 minutes.
Turn onto rack and drizzle glaze over cake while it is still warm.
