Sandy's Potatoes Au Gratin
Ingredients
4 cups thinly sliced potatoes (about 4 to 5 medium)
1/2 pound (8 ounces) Velveeta cheese, cut into 1-inch cubes
1/2 cup finely chopped onion
1 tablespoon horseradish (I use Gold's Hot)
2 garlic cloves, minced
Dash of Tabasco sauce (optional)
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter
Directions
Cook potatoes in boiling water in large saucepan 15-18 minutes, or until fork-tender (but not falling or breaking apart). Drain well in colander.
In a separate pan, combine next 7 ingredients. Over low heat, melt cheese with horseradish, minced garlic, hot sauce, salt and pepper, and mix well.
Using a paper towel, wipe the tablespoon of butter over inside of a 2-quart casserole dish so that bottom and sides are coated. Transfer drained potatoes to the casserole dish. Pour melted cheese mixture over potatoes, and cover.
Bake covered at 350 degrees for 22 to 25 minutes. Gently stir before serving.
