Scalloped Ham, Potatoes, and Carrots (Casserole)
(From my mother's recipe box)
Ingredients
1 thin, large center slice of smoked ham (about 3/4 to 1 pound)
2-1/4 teaspoons flour
1 can condensed Cream of Mushroom soup, undiluted (I also like this with Cream of Celery soup)
1 cup milk
3 cups peeled, thinly sliced potatoes
1 cup pared, thinly sliced carrots
1/4 cup minced onions
Salt and Pepper to taste
Directions
Start heating oven to 375.
In skillet, brown ham lightly on both sides; remove from skillet and cut into serving-size pieces..
Stir flour into fat/drippings left in skillet; add soup.
Then slowly stir in milk.
Heat, stirring, till boiling.
In 2-quart casserole, arrange layers of ham, potatoes, carrots, onions, until all are used, sprinkling veggies lightly with salt and pepper.
Pour soup mixture on top of layers.
Bake covered for one hour. Then uncover and bake 15 minutes longer, or until potatoes are fork tender.
