INGREDIENTS
1
cup white cornmeal, sifted
1
teaspoon salt
1
teaspoon sugar
1-1/2
cups boiling water
3
tablespoons butter, melted
3
eggs, separated
1
cup buttermilk
1/2
teaspoon baking soda
1/4
teaspoon baking powder
DIRECTIONS
Preheat
oven to 350 degrees.
In
a mixing bowl, combine the first 3 ingredients.
Scald
with boiling water.
When
lukewarm, add butter, well-beaten egg yoks, and buttermilk with soda
added to it.
Mix
thoroughly.
Add
baking powder and folk in stiffly beaten egg whites.
Pour
in a well-greased 1-1/2 quart Pyrex baking dish and bake in
preheated oven
at
350 degrees for 40-50 minutes until toothpick in center of bread
comes out clean.
Serve
immediately.
