SQUASH FRITTERS
INGREDIENTS

medium yellow squash, grated
1/4
cup diced onion
2
Tbsp diced green bell pepper
1
tsp. brown sugar
1
tsp. salt
1
Tbsp. flour
1
large egg, lightly beaten
2
tsp. margarine, melted
1/2
cup olive oil
DIRECTIONS
Stir
together first 8 ingredients.
Heat
oil in large heavy skillet
Drop
mixture by tablespoonfuls into hot oil; fry in batches until golden,
turning only once.
Drain
on paper towels and serve immediately.
YIELD:
4 to 6 servings
