Sweet Potato Delight

3 cups cooked mashed sweet potatoes

2 eggs, beaten

1 cup evaporated milk

1/2 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon salt

1 cup sugar

1 teaspoon vanilla

1 stick margarine, melted

 
Directions for Sweet Potatoes

Combine all ingredients and bake in buttered dish at 400 degrees for 20 minutes.

Remove from oven and spread on topping (recipe and directions below).

Topping

1 cup finely crushed corn flakes

1/2 cup finely chopped pecans

1/4 cup melted margarine

1/2 cup brown sugar

Directions for Topping

Mix topping ingredients and spread on top of sweet potato mixture.

Bake an additional 15 minutes.
