TOMATO
GRAVY
(Serve
with Meat Loaf Recipe)
INGREDIENTS
2
Tbsp. butter or margarine
2
Tbsp. minced shallots or onion
1
(14 1/2-oz) can diced tomatoes, undrained
1/2
cup whipping cream
1
tsp. chicken bouillon granules
1/2
tsp. sugar
1/4
tsp. pepper
DIRECTIONS
Melt
butter in a large skillet over medium heat.
Add
shallots OR onions and saute until tender.
Stir
in tomatoes and bring to a boil.
Reduce
heat and simmer, stirring constantly, 2 to 3 minutes.
Stir
in whipping cream and remaining ingredients.
Simmer,
stirring often, for 3 minutes or until mixture is thickened.
YIELD:
2 cups
