Tuna Cakes
Ingredients
1-1/4 cups bread crumbs, divided
1 (12-ounce) can White Tuna, drained and flaked
3/4 cup shredded Cheddar cheese
1/4 cup Mayonnaise (I use Hellmann's)
1 egg, lightly beaten
1/3 cup bottled Ranch dressing
1/2 cup finely chopped onion
1/2 cup finely chopped red or green bell pepper
2 tablespoons Olive oil, divided
Directions
In lage bowl, combine 1/2 cup bread crumbs with remaining ingredients EXCEPT oil.
Shape mixture into 8 patties and coat with remaining bread crumbs.
In non-stick skillet, heat 1 tablespoon Olive oil over medium heat;
Cook 4 cakes about 3 minutes per side.
Repeat with remaining 1 tablespoon oil and 4 cakes.
Serves 4
